Old Irish Recipes - Wicklow Pancakes

This is an old Irish Recipe that is not as popular as it once was. This is a nice tasty Irish treat that can be used as a starter for dinner, or even for breakfast. Personally for me, I cook eat any time I feel like a light meal, or just before I set off fishing. Cook loads of it – it is high in Protein and will keep you going for the day.

4 large eggs
600 ml of milk
4 ounces of fresh breadcrumbs
1 tablespoon of chopped parsley
Some chopped thyme
2 tablespoons of chopped chives or scallions
Salt and pepper
2 tablespoons of Butter

Beat the eggs lightly, then add the milk, breadcrumbs, herbs and seasonings, and mix well. Heat 1 tablespoon of the butter in a pan until foaming, then pour in the mixture and cook over a low flame until it is brown underneath and just set on top. Put under the grill to finish. Serve cut into wedges with a knob of butter on each piece.

Medical Insurance and Healthcare in Ireland

So, Healthcare and Medical issues are always an issue when one visits any country, whether it be on Holidays or longer. Ireland is pretty good when it comes to general Healthcare (Local Doctors etc) but one can get shocked at the Q’s in some of the local Doctor’s Offices.

Hospitals outside the major citiies and towns are shockingly under-staffed - so get prepared for long waits. If you are going abroad from Ireland or are an EU Citizen visiting Ireland on a short stay (e.g. on holiday), you should obtain a European Health Insurance Card (previously known as an E111 form).

This will ensure you will be covered under any emergency(Including Dental) Medical insurance is limited to two major players Quinn and VHI. There are some other companies but they are generally a waste of time if one is looking for proper medical cover. Unlike alot of EU Countries(and for that matter the USA), pretty strong pain-killers can be obtained direct from the Pharmacy(or Apotheke in German), if the medical condition isn’t too serious, this might solve your problems.
